That's strange.
Haven't tested the blind email thing for a long time because hardly anybody is using it. Risk is too high to let blackhats turn the forum servers into spam relays.

... but have taken a look at the code right now and as far as I could see there is only one email sent out to the recipient email address. No copy.

Did you test the feature yourself as a user sending a mail via the blind email.
Do you get the email as expected?
Maybe you could test yourself using a destination address for the blind email which is different to your admin email?
